About us
It all started with Tristian "Tito" Zaldivar who was hired with the previous owner in 2020 to help at the winery and to learn the art of making wine. Tito quickly caught on and discovered his passion of crafting fine wine. After almost 4 years of Tito's dedication, the previous owner was ready to depart ways with the winery, offering it to Tito. After lots of hard work and nurture, UVAS was born!
Making wine with a 'grape-to-glass' mentality involves a hands-on, holistic approach where each step of the winemaking process is carefully managed on-site to ensure quality and authenticity. It begins with sourcing high-quality grapes from all over the Western United States, focusing on our neighbors in Sonoma. Lodi, Napa, Paso Robles, Riverside, and San Diego Counties. Once the grapes arrive to us, they are promptly crushed and destemmed, initiating the fermentation process, where selected yeasts convert the grape sugars into alcohol. This controlled fermentation is closely monitored to develop desired flavors and aromas. After fermentation, the wine is aged and carefully blended on-site, allowing Tito to craft a balanced and expressive final product.

Keeping it in the family
"Uvas" meaning "grapes" in Spanish is a tribute to Tristian and Ashlyn's Cuban heritage on their Dad's side of the family. The Cuban culture and influence runs very strong in their household and in their blood. Their grandma, Ada, was brought from Cuba 24 years ago by their parents and is a big supporter of the Winery. She is a perfect image of the love, teamwork, humor and strength in the growing UVAS Family. It really does take a village!
